I’m majoring in business, but i have no desire to pursue a career in that field. however, i am planning to continue my education to graduate school.

by majoring in business, what are my options (or better yet, what aren’t my options) for grad school, besides the obvious specialty majors like engineering, accounting, etc.

Tons and tons of options exist eg:

Information systems, public administration, counselling and non profit administration also come readily to mind. I am sure you can think of many more.

I am actually finding it hard to think of exceptions – even the ones you gave can be worked around.

I think your best approach is to think about what you want to do without considering if you can get into a program then post here how to get in. I am sure regardless of what you come up with something can be worked out about getting admitted.
